Ingredients
- Natural peanut butter
- Rolled oats
- Oat flour
- Coconut sugar
- Egg
- Vanilla extract
- Baking soda
- Sea salt
- Maple syrup
Instructions
- Preheat your oven to 375°F.
- In a large mixing bowl, combine the peanut butter, coconut sugar, and whisked egg until smooth.
- Add the vanilla, rolled oats, oat flour, baking soda, and a pinch of sea salt, stirring until a thick dough forms.
- Scoop the dough into 1/2 tablespoon portions, roll into balls, and place them on an un-greased baking sheet.
- Gently press down on each ball and bake for 8-10 minutes until the edges are lightly golden.
- Allow the cookies to rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare the filling by mixing peanut butter, maple syrup, and a small amount of oat flour until a thick paste forms.
- Spread a generous layer of filling onto the bottom of one cooled cookie and press another cookie on top to form a sandwich.
Notes
For the best results, ensure your peanut butter is well-stirred and at room temperature before starting the dough. If you prefer a stiffer filling that doesn’t budge, you can refrigerate the assembled sandwiches for 20 minutes to allow the peanut butter and maple syrup mixture to set firmly.
